The Ristorante Le Calandre, which opened in 2003, is one of the Italian restaurants with three Michelin stars and has been included in the list of “The World’s 50 Best Restaurants” for over 10 years. It is the beating heart and research laboratory of the Alajmo Group, founded on the cooking principles that are dear to Max, such as lightness, profoundness of flavour, fluidity and respect for the ingredients in order to capture the essence of the matter. This approach is also reflected in the dining room where every element - the tables, glasses, cutlery, lamps - were designed by the Alajmo brothers and created in collaboration with Italian artisans. The result is a multi-sensorial and harmonious atmosphere that starts in the kitchen and spreads to the dining room with warmth and spontaneity.
